Chicory – Cichorium intybus

Chicory – Cichorium intybus has dandelion like leaves and brilliant blue flowers. An ancient food plant. A tall plant ideal for the back of the border. Likes a sunny site so that the flowers will open.

Chicory also has a number of culinary uses. The roots make a great coffee substitute. Add leaves and flowers to salads.
