Artichoke, Globe – Cynara cardunculus is a large architectural perennial that requires quite a bit of space!
It has large silver serrated leaves with attractive thistle like flowers that are attractive to bees if left.
Globe artichokes like a well drained soil in a sunny position. To keep plants vigorous divide every 2 to 3 years. Cut back dead foliage in the autumn and mulch the crowns to protect from frost.
Much sought after as an attractive addition to both flower and vegetable gardens.
The flower buds are very tasty and can be enjoyed in many dishes. For culinary purposes, harvest the flowerheads before the buds open when they reach the size of a golfball. After harvesting the main head, secondary heads appear which can also be harvested when ready.
